Victorian Sponge Cake





This simple yet delightfully tasteful cake was a favourite of Queen Victoria especially during her tea parties. That is how this cake got its name. It is a two layer sponge cake filled with a layer of jam in between. This cake has a spongy and moist texture which makes it perfect to be served plain with a cup of tea yet it is also excellent when served with fresh fruit or a dollop of whipped cream.
