Birthday Cuppycakes

Last weekend there was a birthday celebration for baby Jeremiah in my church who just turned one! In conjunction with that, I baked some birthday cupcakes for him. As you can see, these cupcakes are based on a children's theme hence the colourful MnMs on the various chocolate and vanilla cupcakes. The adults loved it as much as the kids did!

Blueberry n Cheese in a cup

This is one of the latest additions to my cheesecake recipe collection. This time it comes in a cup! Each bite of this soft airy texture of the cupcake reminds me of clouds. It is also filled with blueberry goodness and I especially love it as it is not too sweet but the blueberry jam and fresh strawberries adds a really fresh flavour to it.

One can never go wrong with chocolate cake. Everybody loves a taste every now and then regardless if you are a chocolate lover or not. I especially love that feeling once you sink your teeth into that moist cake and that sinful taste of rich, luscious chocolate fills your mouth keeps you wanting more. For this cake, I added some butter cookies to give it that extra crunch!

Pandan Seri Muka

My sister loves this cake and I always bake this whenever she comes over for a visit. The soft creamy custard complements the rich pandan flavour of the sponge cake. This cake is best eaten fresh or even chilled. The taste and chilled effect is indescribable. One has to try it to find out.

Angel Food Cake

Angel cake has a sweet golden brown crust with a soft and spongy snowy white interior. This cake is made with egg whites, sugar, vanilla and almond extracts, and flour. It does not contain egg yolks or any fat so it is perfect for those watching their fat intake. It can be eaten plain with just a dusting of powdered (confectioners of icing) sugar, filled and frosted with your favorite icing, or served with fresh fruit and softly whipped cream. It is also excellent with fruit sauces, chocolate sauce, ice cream, frozen yogurt or sorbet.

Just realised that most of my loyal customers have a liking to tiramisu as I had quite a few orders lately...

For a little history, Tiramisu is an Italian dessert invented in the 1960's at the El Touga restaurant in Treviso, Italy. Literally translated, Tiramisu means "pick me up" or "carry me up",which probably refers to the jolt you get after eating espresso and alcohol laced ladyfingers. It is often called an 'Italian Trifle" because, like any trifle, it has layers. In this case,the sponge cake is layered with Zabaione (an Italian custard).You can garnish the top of the Tiramisu with a dusting of cocoa powder and/or shaved chocolate, and a scattering of fresh raspberries.

It is best served chilled so then you can fully savour the buttery-rich, velvety softness of the custard molded together with the cake.

Durian Cheesecake

As the durian fruit is in season, I took this opportunity to add the king of fruits (as we call it in Malaysia) into this cheesecake recipe. To my surprise the hint of durian flavour complemented the cheese well. In addition to that, the texture of the durian made the cake more moist, tasty and flavourful. For all durian lovers out there or for the more adventurous, do give this a try!

Cotton cheesecake

This is also a new cheesecake recipe made from cheddar cheese instead of the usual cream cheese. The light fluffy texture of this cake is suitable for all palates especially those who love cheese but rather opt for something less creamy. Guaranteed to melt in your mouth and goes well with a warm cuppa!

Sometimes I get inspired to reinvent my recipes. Hence from the simple butter cake that I featured earlier, I decided to build it up by adding a little spice and some sparks....and came up with not one but 2 brand new recipes!

Here you can see the Almond flakes Butter Cake. It's for those of you out there who fancy a little twist. The cake texture is perfectly maintained while the almond flavour complements the buttery taste. Gives it an extra crunch I might add.

Then there's my favourite cinnamon spice which blends well with almost anything including this butter cake. Goes well with a cup of English tea or a frothy cappuccino.

This time around I'll be featuring Blueberries! As it's not a common fruit in our tropical country I use imported blueberries.
First up, Blueberry Cheesecake. This is a creamy cheesecake loaded with blueberries and topped with fresh strawberries.

Next up is the Blueberry muffins baked to perfection with a dash of icing sugar on top. These muffins are light, fluffy and packed with blueberries too! Perfect for breakfast, afternoon tea or an anytime snack.

As stated above, today's featured pastry revolves around bananas. These tasty treats were such a delight to bake because of the lovely scent that lingers long after they are freshly removed from the oven.
Presenting the Fresh Banana Cake. As its name says, I only use fresh bananas to bake it. This soft and moist cake is a real delight to the palette. One bite of it and you'll never want any other banana cake...

As i was being a little more adventurous that day, I also baked a batch of Banana-rama Muffins. The texture of the muffins is quite different from the cake, more munchy with a soft blend of banana and vanilla flavour. For those of you who loved the banana cake, you should definitely give this muffins with a twist a try.

Calling out to all chocoloate lovers, the muffins featured above are the famous Triple Chocolate muffins, namely because it contains chocolate chips, chocolate chunks and chocolate cream all rolled into one. Weekend's Galore

Hello all!
Was busy mixing and baking last weekend as i had some orders to attend to. So today I will share with you all my baking adventures : Homemade egg tarts and Jammy muffins

These egg tarts look yummy and enticing but in actual fact are very time consuming and require more attention especially in perfecting both the pastry and custard. However after relentless effort I finally succeeded in doing so. This sweet crust pastry blends marvelously with the egg custard and here are the results :

As for the Jammy muffins, they are not only a hit among the kids but the older generations have a soft spot for it as well. These piping hot vanilla muffins topped with a tint of icing sugar are filled with Strawberry jam that will melt in your mouth.

A New Taste in town

Hello this is "Kim's Mix N Bake" 's first baking post. Everyday will be a new day for new tastes and I will try to update as often as I can. As I love to mix and bake, I will create new recipes whenever I have the time and share it with you all. I specialize in Muffins and Cupcakes which come in a variety of flavours and colours. However I also bake cakes and tarts so feel free to look at the pictures and take your pick!
Most of the recipes I really want to make at the end of the day - simple,satisfying treats - require no special gadgets, skills, or ingredients, nor alot of time. What I've learned is that a good grasp of basic proportions and some really simple fundamental techniques are what's made for good baking.
People complain to me that baking is fussy and messy : "Bakers are born,not made...Baking is an art...Baking is a science."
Anyone can walk into the kitchen and bake something but the result is not necessarily perfect. To be good in baking,one needs interest and creativity. Then only can one enjoy baking.
